Our cooking starts in Al-Andalus, and ends with what this land gives today.

Al-Andalus is our foundation: its spices, its love of almonds, citrus and fire, its way of balancing sweet and savoury. From there, we cook with what is closest and best: fish from the coast, meat and vegetables from the Málaga countryside, olive oil from the hills around us. Km 0 whenever we can, and never at the cost of quality.

The chef

Julio Jiménez Ramírez

“I’ve become convinced that the best cooking doesn’t begin in the kitchen. It begins much earlier: in the soil, the olive groves, the orchards, the sea… Here almost everything has Andalusí roots. It’s not something you learn from a book; it’s something you breathe. The Andalusí legacy is still alive, and every dish is our way of proving it.”

Julio researches the techniques of Al-Andalus, from old spice blends to slow cooking over embers, and brings them into today’s kitchen. He revisits Málaga’s classics, works with local producers and rewrites his menu every season.

The season, on the menu

Our menu follows the calendar: artichokes over charcoal, sea bass with gazpachuelo, suckling goat slow-cooked for five hours… When the season turns, so does the menu.

At weekends we also open at midday: a table on the terrace, the garden around you and the sea on the horizon.
